OT - leftover pico de gallo ideas

Happy Monday, STalkers!

Yeah, right. Uh-huh. I didn't want to get out of bed either. I slept like shite, which translates into a pounding headache and a gallon of coffee likley won't be enough to get me to lunchtime. I'm still waiting for those ibuprofens to kick in but, after 30 minutes, I'm not holding out much hope.

My sister (and BIL) were in town for the family barbecue this weekend. They hit the road this morning on a leisurely trip home, visiting some areas they've never seen. She made a DELICIOUS pico de gallo and, obviously, they cannot take the leftoevers with them. I luuuuuuurrrrrrrrvvvvved that pico and said I'd take it. However, there's a TON of it and DH won't eat it. I'm trying to come up with some ways to use it so it doesn't go to waste.

I've only thought of two things:

  • Adding cooked shrimp or fish and putting it on corn tortillas (that's a LOT of pico....)
  • Adding cooked shrimp or fish and adding it to a mixed greens salad.

Ideas?? I'd like to eat as much as possible - it's tasty AND healthy! - and have little to none to throw away.

Yum! Tacos, burritos, quesadillas, nachos, put it on flatbread with some cheese and have a pico de gallo-type bruschetta, mix it with some pasta and corn and black beans to make a pasta salad, send it to DPW for munchin' (LOL).

I happen to have a can of black beans in the pantry AND some noodles! I also have zoodles but that would be too much green stuff!

That's a great idea and I would do that if I had time to make the chili. I do plan to make this pico in the future so I will save this idea. Thank you!

Ah.. chili is a dump in the crockpot dish.  I just brown and drain ground beef... put in crock pot then dump in the canned tomatoes, drained beans and green chilis (maybe a little frozen corn too)... maybe add some chopped onion and then a packet of mccormick chili seasoning (I use one more can of tomatoes than the call for and add extra peppers etc.. if I'm feeling froggy.) then let it cook during the day.  super easy.. you could even get some of the frozen morningstar crumbles (vegetarian) and omit the meat.  it is really about the quickest thing to make ever.

I confess... I'm a control-freak when it comes to my chili. It's my Mom's recipe and has never seen the inside of a crockpot. I tend that dutch oven for HOURS. I'm willing to cheat and use that pico but I honestly cannot put it in a crockpot. ~hangs head~Dash 1

Oh, thank goodness! I don't want to lie to you and say I'll make chili in the crockpot. My mother would likely be rolling in her grave.

Psssst.... spaghetti sauce is an all-day-on-the-stovetop thing, too. Mom's recipe! Pleasantry

Ani I love your mom's chili and spaghetti!!!!! She always made ALOT of spaghetti sauce so she could make lasagna another meal. Your mom (and you!) made the best lasagna I've ever had. <3

Yes! I was thinking fajitas just from reading your title. I use yellow, red, and orange bell peppers and lots of onion for mine. Maybe chicken and/ or beef for hubby if he's not up for seafood?

I love dogs, I could eat Mexican almost every day! I could get a small piece of beef, slice it, cook it, mix it all together, and top with some sharp cheddar. Yum!

My hubby will not eat it. He loves Mexican (expecially shrimp fajitas!), but this pico has a lot of green pepper in it and he will only eat a little. Also, he works second shift, so I eat dinner solo. He will eat either cereal or other leftovers but he will NOT eat that pico.

My very favorite breakfast is a breakfast taco.  Flour tortilla with scrambled eggs, pico, cheese, bacon or sausage.   I often make these when I have company for breakfast.  I have each item separately and let people assemble them as desired.  I 

If you do have left overs you can sauté the pico and use it to flavor meatloaf, chili, meatballs etc.  You could also freeze it in small portions to add to cooked things later.

Notasm, that is PERFECT!! I would LOVE this comment, if I could. I have a lot of leftover bacon bits (I took a shortcut with my broccoli salad) and we always have cheese.

I know what I'm having for dinner tonight! Eggs, bacon, extra-sharp cheddar, and pico topped with Tabasco or Sriracha. Thank you, hon!!

Am I showing my mid-west roots? LOL

Cubed chicken (or beef if you want?), beans if you want (black or pinto), an easy cheddar cheese sauce (or jarred if you are ok with that), rice and the pico. Bake until bubbly. Avacado and tomato or green salad on the side.

Sounds like an easy week-night meal.

Another good idea!!! I could sauté some ground turkey breast or lean beef with minced garlic, then add a can of black beans, chili powder, and the pico. Throw in some Minute rice and cook that up. I have half a jar of queso (medium heat) that I could stir in, then divide into my work lunches and freeze. Thank you!!

I use conventional rice... just stir it in uncooked and bake. Sometimes I have to add a bit of water at the last 10 minutes for the rice to get done, but not often... depends how much juice is in the pico.

I only have Minute rice and the rice I use for puuro. I'm going to do this is my huge skillet and skip turning on the oven so it comes together quickly (working long hours this week). The pico is VERY juicy - I may have to drain it a bit.

You could do a kind of mexican bruchetta type dish? Toast up a baguette and eat it on that!

Pico also tastes AMAZING on burgers!!! (especially with a touch of guac...)

Sliced avacado, a squirt of lime and just a dash of salt!

I literally ate a bag of avacados from Sam's Club WEEKLY when I was pregnant!  The craving was real.

She made a YUGE batch of the stuff - quadrupled the recipe! But they also brought FOUR other dips! And we had soooooo much food. There were plenty of leftovers. Some went home with my Dad and SM. I actually GAVE AWAY the leftover bottles of margaritas (DH and I don't drink that stuff). No one else wanted any and I knew that I would figure out something - with the help of my food savvy STalkers!!
