Marshmallows on your sweet potatoes or not?

IMHO.... BLECH!!!! I make a sweet potato casserole with a delicious pecan topping. Marshmallows? Those are for hot chocolate (the mini one), bonfires, and s'mores!

When I was a kid, yes. Now? Nope. I'm with you - a lovely candied pecan topping is the way to go.

Ghost, that's similar to what I make. I always use chopped pecans and heavy cream instead of milk.

My parents like filling it with brown sugar and marshmallows on top... Never had it any other way, but I don't have a huge sweet tooth, so I was so not a fan. Turned me off from sweet potatoes in general. lol

I add the marshmallows because my kids like it better that way, and for me it’s all about getting the kids to eat it.

I don't think I've ever had marshmallows on sweet potatoes. Not sure I'd like them. I do think pecans and sweet potatoes are a great combination, though.

I don’t.. but this year I will use them. Going to hubbys niece’s Home. She has three small kids. But I am going to add some bacon on top as well....trying to tame the marshmallows.

Nice.... you’re going to hate me, but I don’t like pecans. So I’m substituting bacon for the pecans. LOL

WTF, I could never hate you!! Not everyone likes pecans. I have a nephew who is allergic to nuts! I hope that bacon is crispy...

No....over a fire or in a cuppa hot chocolate are the only two places I put my marshmallows :)...Peeps don't count LOL

Veritas, do NOT try the hollowed-out, booze-filled marshmallow. Much too messy and a disservice to both the toasted marshmallows AND the booze.

Butter, brown sugar, marshmallows, AND pecans! But only on Thanksgiving.

Normally, butter and salt. Or marshmallows (with no salt).

No marshmallows ever. Mine are candied with oranges. My grandmother's recipe. They're amazing! (No one else in my house eats, them, of course. Not even Bio DD!)

I can usually find a seasonal “gingerbread” marshmallow - it’s delicious on my sweet potato casserole! Thanks for reminding me I need to get them !

My boys don't care for sweet potatoes, so I make them with butter and cinnamon for myself and DH.
If marshmallows aren't incinerated over a fire, they are loaded into the shooters and sent outside for a nice round of kill your brother.

Marshmallows SHOULD be incinerated!! When I 'toast' mine, they look like a torch. LOL!! I honestly do NOT understand these people who think that toughening the outside of the marshmallow with a bit of heat so it turns a pale beige color is toasting it!!

I'm firmly in the NON marshmallow camp! Both my hubby and I hated sweet potato casserole growing up due to marshmallows on top. I now make a sweet potato casserole with a crunchy pecan topping that is TDF! My boys love it, as it's truly like a dessert. When I take it anywhere, it disappears and people ask for the recipe. And I have nothing against marshmallows. They just don't do anything for sweet potatoes, IMHO.

SMto2, both of my beeyotchster-in-laws were always MUST HAVE MARSHMALLOWS. Until the year I brought my casserole. They both ate it and loved it!!

Sweet Potato Praline Casserole

Sweet Potato layer:
6 sweet potatoes, cooked and peeled
5 Tbsp butter, melted
3/4 cup sugar
2 eggs
2 tsp vanilla extract
1 tsp cinnamon
1 tsp salt
1/4 cup heavy cream

Praline Topping:
3 Tbsp butter, softened
1 cup brown sugar
1/3 cup flour
1 cup chopped pecans
1/4 tsp salt

Directions:
1. Preheat the oven to 400°. Spray 9 x 13 baking dish with cooking spray.

2. Cook sweet potatoes in oven, microwave, or boil until softened. Let cool slightly and peel.

3. In a large bowl, combine the sweet potatoes, butter, sugar, eggs, vanilla, cinnamon, salt and cream or milk and mix until creamy.

4.Pour the mixture into a 9 x 13 baking dish.

5. Topping: Combine the butter, brown sugar, flour, pecans, and salt in bowl. Sprinkle the topping over the sweet potato mixture.

6. Bake for 20 to 25 minutes, until the topping is lightly golden brown.

Aniki, your recipe is VERY similar to mine!! Instead of heavy cream, I use evaporated milk, and then just a dash, depending on how moist the sweet potatoes are. Also, when I first started making it, I used canned sweet potatoes. Then someone brought the same casserole to work using fresh sweet potatoes, and it made my taste buds explode!! Now only real sweet potatoes for me!! I usually nuke them the night before and then let them cool overnight. Most people are surprised to learn, the next morning, you can peel them with your fingers in seconds. I bet that's the same if you bake them as well. I wish I could say I'm making this dish for Thanksgiving, but unfortunately, we don't have a kitchen this year because ours is being remodeled. AND, I forgot to add, we are going to Thanksgiving at my DH's family's, where MIL still makes the same sweet potatoes with marshmallows that we hate. Sad I'll be dreaming of next year when I can try to have it in my own house again!! Smile Happy Thanksgiving!

Sweet potatoes ... hmm. In New Zealand we roast them. Yes people, roast them, No sweet toppings for this Kiwi Girl. I tried one with brown sugar and marshmallows a couple weeks ago, I'll pass.

Oneoffour, I like roasted sweet potatoes!! Add some butter and I'm good. Occasionally, I sprinkle on a bit of cinnamon. Smile
