OT - Eff Off/Forn Friday
Are you as ready for the weekend as I am? A month-long vacation would be welcome, but likely would not be long enough. *wacko*
First things first... Eff off to:
- Cancer
- The 'rona
- Zoom meetings (definitely suffering from zoom fatigue and fight the desire to run away screaming when one pops up on my calendar)
Forn is a combination of 'food' and 'p0rn'. With Thanksgiving just around the corner, let's talk turkey. Or stuffing. Or pie. Or whatever dish you look forward to eating!
For many years, I didn't know that cranberry sauce came in a can. And so bland! We grew up eating a homemade relish, courtesy of my dear Mom.
CRANBERRY ORANGE RELISH
- 1 lb fresh cranberries
- 1 small naval orange
- 2 c sugar
- 1 pk raspberry gelatin
- 1 c hot water
- 1 c nut meats - normally walnuts
- 1 c chopped celery
- 1 c chopped pineapple
- 1 ripe apple w peel - chopped
- Chop cranberries in a blender 1 cup at a time.
- Remove to another bowl after chopping.
- Chop orange in blender, add to bowl.
- Add 2 cups sugar to bowl, mix well and let stand overnight in a refrigerator.
- Dissolve gelatin in hot water, refrigerate.
- When half set, add to cranberry mixture, then add rest of ingredients.
- Pour into 9x13x2 glass dish and refrigerate.

Eff off to having to work again this weekend. Only 2 weeks more to go until have a mini stay at home vacation. Please keep your fingers crossed that I'm out of lockdown by them so I have go out for a lovely lunch with DH.
Forn - the lunch I'm hoping is canceled by covid is SEVEN COURSES including Roast Orkney scallop with chestnut, bacon and celeriac and Gâteau Opéra with peanut butter.
We don't have thanksgiving here but my favorite Christmas dish is a starter of smoked wild salmon slices on buttered Irish brown bread with a squeeze of fresh lemon. Simple to prepare but so good.

My grandmother would make something like your recipe, but would use candied roasted pecans. The memories of all the great food is making me hungry.

Since the probation originated in my county...
the courts and probation are allowing her evil return. I still have a RO against her, so let her show up anywhere near my house. I do have to give the probation department a thumbs up, for letting me know that Leech is coming back.
We live in a rural area, but everyone in our neighborhood is aware of the issues with Leech, so they will all be informed that she's coming back. Most are retired or work from home, so everyone will keep an eye out for her. Hell, even the new family, that moved here last month, is aware of the problem. In someways, it's a PITA to have nosey neighbors, but we all come together to protect and help each other.

I make this cheesecake every year and no one misses pumpkin pie.
Maple Pumpkin Cheesecake
1 ¼ cups graham cracker crumbs
¼ cup sugar
¼ cup margarine or butter, melted
3 packages (8 oz. Each) cream cheese, softened
1 can (14 oz.) Eagle Brand sweetened condensed milk (NOT evaporated milk)
1 can (16 oz.) pumpkin (2 cups)
3 eggs
¼ cup pure maple syrup
1 ½ tsp ground cinnamon
1 tsp ground nutmeg
½ tsp salt
Maple Pecan Glaze (recipe follows)
In 9-inch springform pan or in 13x9 pan, combine crumbs, sugar, and margarine. Press firmly on bottom of pan. In large mixing bowl, beat cream cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Add remaining ingredients except glaze; mix well. Pour into prepared pan. Bake in 300 oven for 1 hour and 15 minutes (1 hour and 5 minutes for 13x9 pan), or until edges spring back when lightly touched (center will be slightly soft). Cool on wire rack to room temperature. Chill. Top with Maple Pecan Glaze. Refrigerate leftovers. Makes 16 servings.
Maple Pecan Glaze
1 cup whipping cream
¾ cup Cary pure maple syrup
½ cup chopped pecans
in medium saucepan, combine cream and syrup. Bring to boil over medium-high heat. Boil rapidly stirring occasionally for 15 to 20 minutes or until thickened. Stir in pecans. Spoon warm sauce over cheesecake, ice cream, or waffles. Makes about 1 ¼ cups.
Tip: Sauce may be prepared ahead and refrigerated. Reheat in microwave.

Eff off to being alone on thanksgiving. To all that are alone you are in my thoughts. It is hard but we can do it. Glad to be alone than alone and with someone.
