OT - Vanilla bean paste
Has anyone used this and do you recommend a particular brand? I've been reading a few recipes that use VBP, but do not state the brand used.

Here in the uk as long as you go for Extract rather then Essence (which is man made) you should be ok. Or look for Madagascar Vanilla then it will be good.
I've used 'Nielsen-Massey Vanilla Bean Paste' before and it very good.

LOL Acra! A vanilla bean is where the vanilla flavor comes from! We used to do homemade vanilla bean extract at home! Vanilla beans are how it grows!

Vanilla bean pastes is a ground vanilla bean pod paste so you get the little black seeds in your cooking as well as the vanilla taste.

Aniki, I have scraped pods
Aniki, I have scraped pods and this is much easier. I like it better in most recipes that call for vanilla and where I want the bean to show. As for taste, I have tried a few different brands and they all seem to taste the same, although I was surprised that the ones that include extract do have a more full flavor than those that don't.
I make a dressed lobster dish that includes a vanilla bean butter (not sweet) and the paste I use does contain sugar, but it is such a small amount that it actually opens up the flavor better with the salted butter.
