OT - Thankful Thursday

One day closer to the weekend and it cannot get here soon enough. Chaos means I need to reflect on that for which I'm thankful.

  • It's a balmy 54 degrees out today. We've already had snow and single digit temps (a tad too early on those temps) so I'm enjoying another day of actual Fall!
  • Login issues, zoom conferences, an overabundance of emails, and idiocy all mean I have a job.
  • My immune system is doing a stellar job against several exposures to the 'rona.
  • Working from home has proved I am adept at thinking outside of the box. 
  • WFH has also allowed me more time in the kitchen during the week. Some of my concoctions are positively drool-worthy (pear, prosciutto, and gorgonzola pizza anyone?)

What are YOU thankful for?

Real thankful you're back! Thankful for my wife and my kids. :D  And that your DH is up for bow hunting this weekend. *yahoo*

I was wondering why my husband was taking so long to get home. Typically he gets home before myself, and I had had time to go grocery shopping and get out of work clothes and start a load of laundry and start folding previous laundry.

Where was he?

He gets home, its dark of course. And pulls a wheel out of the back. A mountain bike wheel! I am now the proud owner of a new-to-me mountain bike, that looks like its never been ridden. Wow. So grateful because I have been looking at bikes and have people who want to go riding with me and Ive been wanting a new sport...

So - grateful for my DH, who always manages to surprise me somehow, just when I think Ive got him all figured out!

That is so cool!!! I have been toying with the idea of getting a mountain bike. Good on your DH!

you can pretty much ride year round...and Im 20 minutes from beachside rec trails Biggrin

Grateful for that too.

I sometimes have wanted to pull all my hair out piece by piece over DH and his Disney parenting and other issues.  But, my DS's mother-in-law is in the hospital so he and wife are coming for a 2-week stay, maybe longer depending on how things go.  My DH didn't turn a hair when I told him, actually called DIL to get the latest medical report and give his opinion and advice. Lol.  He reacted the same last year when they came when a hurricane flooded them out.  That stay was 4 months.  I regret to say it, but I wouldnt have been so accommodating if the situation were reversed.

I'm thankfuly for:

  • Family that cares enough to pester me
  • My puppies who are only needy becuase they love me and want to spend time with me
  • The ability to work from home regardless of all the chaos that comes with technology issues

I am thankful for the coffee DH makes for me in the morning and for the drink he pours for me in the evening. As crazy as that man makes me sometimes, he's still a keeper.

I am thankful we are getting some much needed home improvements done next week and it's going to be a super short two day work week, then I can snuggle in at home, bake, make soups and spend time with my DH and kids.

That sounds lovely! I've been in soup/chili making mode for several weeks now. This "heat wave" won't end until early next week so no chili making this weekend. We'll be having taco salad on Saturday and breakfast for dinner on Sunday. Biggrin

I know, slightly mad but I'm grateful that we are going into a month's lockdown because I have a mad month at work to get the deal I'm working on done by 30 November.  This way there will be NO distractions.  I won't have FOMO about being stuck at my desk 24/7.

I'm grateful, like other posters, that I have a job in this time of turmoil.

I'm super grateful that I have been locked down with DH who is a keeper.  He brought be breakfast in bed this morning just because.

I've also had more time to mess about in the kitchen and while I haven't reached the heights of Aniki's amazing pizza I have perfected a fab carbonara pasta done the traditional Italian way without cream.  Pasta, bacon, eggs, parmesan and cooking water from the pasta.  All done in 10 minutes.  I wish my student self had known how easy this was to make.

TASM, I've found I'm much more productive working from home because most interruptions are planned (zoom) so I work around them.

Practice makes perfect to get a really glossy sauce.  Its from a recipe by Gennaro Contaldo.  You can find a demo on youtube.

Ingredients

2 large free-range eggs

1/3 cup of  Parmesan cheese (I am more generous with the cheese but this should be to your taste) , plus extra to serve

sea salt

freshly ground black pepper

1 cup of piece of pancetta or smoky bacon cubed

2 cups of dry spaghetti (I like doing it with macaroni instead some times)

1 clove of garlic , peeled

extra virgin olive oil

Method

Put the egg into a bowl with the finely grated in the Parmesan, season with pepper, then mix well with a fork. Put to one side.

Cook the spaghetti in a large pan of boiling salted water (should be like the sea) until al dente. While the pasta is cooking put 1 tablespoon of oil in the base of a medium frying pan  then place over a medium-high heat. Crush the garlic clove with the palm of your hand, add it to the pan and leave it to flavour the oil for a minute. Stir in the pancetta, then cook for 4 minutes, or until it starts to crisp up.

Pick out and discard the garlic from the pan, then, reserving some of the cooking water, drain and add the spaghetti. Toss well over the heat  then remove the pan from the heat. Add a splash of the cooking water and toss well, season with pepper, then pour in the egg mixture – the pan will help to cook the egg gently, rather than scrambling it. Toss well, adding more cooking water until it's lovely and glossy. Serve with a grating of Parmesan and an extra twist of pepper.

have to go away from me for 3 weeks. On Tuesday the command informed him he would be going away for 3 weeks between Thanksgiving and Christmas for this training mission. Then yesterday, he was informed they are sending someone else.  YAY

from college at the end of this semester.  He will have completed a degree in economics in 3 years instead of 4 and will gradute with no college debt.  This is my autism spectrum kid..so its really gratifying to see all my hard work coming to fruition.

I'm thankful for my job...even if it has sucky hours, it allows me to pay for DD's college and hopefully she will also graduate in 3 years with no debt.
