OT-Deer meat recipies

mommadukes2015's picture

SO got a deer this morning (while I was happy for him on the phone-I don't like deer meat-it's game-y). So now I'm about to have a hacked up Bambi in my fridge which I will be expected to turn into some form of edible food.

Do any of you have any recipe's to help me make sure this poor thing doesn't go to waste?

I don't eat meat anymore, but when I did, all I could stand from deer was jerky. My stepdad used to have it made somewhere when he got a deer.

You can try foodnetwork.com or allrecipes.com and see if they have any recipes that look appealing. The alternative is to find a Good Ole Boy Bubba who looks to hunt and see what he suggests. Wink

Deer salami is ok if he has some made into that. My son had jerky, salami and a sausage type thing (like a bratwurst). Except for trying the salami he gave his dad, I did not taste the other things.

It may all be perfectly yummy (?) , I just can't bring myself to eat it. He does stews and grills steaks.

IDontCare, you made me laugh.... yeah my son, ssssshhhhhh, don't tell him I've referred to him as my little Bubba. Poor little squirrels, rabbits and deer.

DH makes really good venison steak - pair it with baked potato and a steamed broccoli or grilled asparagus. We also tend to make goulash with the ground venison. Elbow noodles, canned tomatoes, onion, garlic, Mrs. Dash Steak Blend, water, a dash of Worcestershire. DH will throw it whatever seems good at the time.
And, my favorite, venison stew! Potatoes, carrots, celery, onion, garlic, beef broth (you can use venison broth if you keep the bones and make your own, but we don't), herbs/spices to taste (we use garlic, Mrs.Dash table blend, and a hint of oregano & thyme). All slow-cooked to a perfect thick and filling stew.

Send any deer you’re expected to eat to me? lol I LOVE deer and elk and rabbit...

Alternatively, see if he open to making deer jerky, or my uncle used to use some marinade for his wife like day in advance, she claimed it make it less gamey.

Deer Lasagna!
You just ground up the deer meat, fry it in a couple teaspoons of oil with salt and pepper, and make your regular lasagna recipe, Lasagna noodles, cheese, sauce, spices, put it all together in a big pan and bake it until bubbly and everyone will be so excited! serve with french bread!

Ewwwww

Sorry but ewwwwww. Wink
OUR best friends are husband and wife hunters. I just cant eat it.

They make everything as if it were beef. DEER Taco's, meatloaf, chili, hamburger helper.

In a nut shell, use deer meat on all recipe's that call for Moo Cows. }:)

At least that is how they do it. HUGE hunters.

Mmmm, DH would be in heaven. We actually had moose last night. LOL

there are a couple things you can do to dull the gamey taste...

Because the meat is so lean, too much salt really just sucks the rest of the moisture out of it... if anything, I add a scoop of bacon grease to the meat as it's frying, if I'm frying it in a pan. Though the meat is lean, a lot of the gamey taste is held in the little fat there is... so trim it off as much as you can. This also means it should be cooked in lower temps... anything over 140* internal temp will really just dry the F out of the meat.

Marinating the meat in vinegar or buttermilk can also reduce the wild taste.

We use game meat just like we would use pork or beef... we just adjust the temperatures and the flavors we use.

easy way out to get the gamey smell and taste gone....

let it rest in buttermilk over night, after that you can do with it what ever you want, does not smell or taste gamey at all
and tenderize the meat a bit.

I would simply make a huge pot of stew with it, you can kill it with spices and veggies,
or goulash with a spicy sauce, I never had the pleasure of eating Bambi }:) cause we do not have those animals on Mars.

oh if you do not have Buttermilk handy, make your own

3 eating spoons of white vinegar per cup of full cream milk, let it stand for 2 hours to form. Who cares, mix it all and pour it over the meat, I say it's going to stand over night in the fridge any way it can form there lol... and it works.

If you can't stand Bambi... never ever in your life try Blue Wilde Beast?? (Gnu) it's disgusting, I leave my house when Deigma makes his steaks  but the rest of the game on Mars no problem at all
