Product plug notice - A strangely emotional experience.

I do not have any skin in the game with this company.  DW and I are avid customers.  Ideal Protein is our core low carb medically supervised nutrition model.

For decades I have not had bread much other than a nibble off of a corner of my mom's magic.

We have a standing every Sat AM appointment at out IP clinic for body analysis/weigh in and to buy our weekly IP groceries.  I Had a low BG episode this AM so DW went alone.  She came home with a sample of Multi-grain Seeded Bread.  A small packet, one for each of us, with three slices of the bread per pack. Each slice is about the size of a melba toast.  This is a dark-ish bread with dark seeds evenly backed in.

I cut the stack of three slices in half, added some Dijon to one half slice, a bit of mayo one the other half slice, added a small slice of Colby-Jack between two half slices, a small slice of Pepper-Jack to another, and a small slice of Swiss to the third half slice pair.  I toased them all in a small non stick pan with Basil, Parmasian, Garlic oil until they were darkly toasted, melted, and crisp. 

OMG.  Amazing.

I am a bit flummoxed over how moved I am to eat bread and not explode my blood glucose.

Of course I had to share. Which I was not thrilled about.

That does sound delicious! I miss bread, too. I gave up gluten due to psoriasis and migraines. Several family members have celiac so i thought it would be worth a try, and it worked for the psoriasis (not so much the migraines.) I could eat half a loaf of French Bread in one sitting back when i was hitting the gluten really hard lol. Those were the days...

Unfortunately it is not gluten free. Isolated wheat protein is the top ingredient.  Though I am sure there are some tasty breads out there made with nut flours or seed flours (e.g. flax) Vs wheat or other grain flowers.

I think I may have a sensitivity to gluten some breads (like that wrap from chick fil a) cause bloating
